The Winter Wonderland continues here in Upstate NY, and for those who aren’t lucky enough to be somewhere tropical right now…well…we wish we were. I ate a raw clove just the other night. Am I turning into a witch doctor? Possibly. But also, you know, candida. In the meantime, I thought some garlic soup could be healing. This soup is thick and very filling. Top it with something fun. Cheese. Avocado. Fresh tomato. Organic non-GMO corn chips. Whatever makes you happy.
I would have never tried this sandwich by my cousin Maria, who loves pesto, tried this out and raved about it. It's gourmet good!!!
Ever since a parent of one of my students brought me a home-made buttermilk blueberry muffin, I've always wanted to make something similar myself. This recipe found on pinterest is exactly what I was looking for.
Quiche cups are about the easiest, quickest, most portable paleo dish out there. And I can’t get enough. These bacon, apple, and kale cups are scrumdiddlyumptious, and the pear and ginger ones are pretty good too. I suppose it depends on your palette. Ginger is not my flavor of choice. Lesson learned. These zucchini cups have, oh…3 ingredients. Plus salt and pepper. Plus they’re Portable, Paleo and Parent-approved. It’s a trifecta of Pleasant Perfection (or healthy Progress).
