A very easy and fairly quick one pot meal that's perfect when you're in a hurry. Chunks of chicken and rice seasoned with star anise and Chinese five spice powder. Yum.

I marinated my boneless skinless chicken breasts overnight and grilled them. Very nice sauce.
I used fresh minced garlic and added some sliced green onion. I marinated skinless chicken breast cutlets for a few hours and grilled them briefly. Sprinkled with additiona sliced green onions and some toasted sesame seeds.
This version of the garlicky roasted eggplant dip does not have tahini in it as with a traditional version. While I really like an "authentic" baba ghanoush, I also enjoy the commercial Sabra brand, which uses mayo and some spices. It is slightly sweet and has a little kick. This is my rendition.
I have never met an eggplant I didn't love! Eggplant is one of my favorite vegetables. The nice thing is you can make it so many ways. This recipe is really easy and turns out a delicious dish that tastes great when served with hot Chapatis.
While this cold salad has some elements of a traditional warm German potato salad, it is totally Americanized to suit my family's tastes. Great with grilled burgers, dogs, meats and poultry.
A quick, easy and flavorful salad. I added a bit chopped red onion, and used lemon juice instead of lime juice, and it was very tasty. Next time I will use pickled jalapeno, which I think will make the salad taste even better.
