A delicious way to prepare pasta. Broccoli, carrots and cilantro brighten up the whole dish, and sesame sauce adds the delicious ceaminess and nuttiness, and all the yummy Asian flavor. It’s an easy dish that’s packed with flavors. Serve it as a side dish or a simply tasty main dish.

Directions

Bring a large pot of salted water to a boil.

Cook noodles until al dente, about 10 minutes.

2 minutes before noodles are cooked, add broccoli and carrots into boiling water with pasta.

When pasta is cooked, drain pasta and veggies, and rinse in cold water. Drain well.

SAUCE:

In a small skillet, heat vegetable oil and cook scallions, garlic, ginger and chili peppers until garlic is soft but not brown.

Turn off heat and add vinegar, soy sauce, sugar, sesame paste and chicken stock.

Heat and simmer sauce, stirring for 2 minutes.

Stir in sesame oil. Cool to room temperature. Pour sauce over chilled noodle and veggies, mix in celery or cucumber, and stir well.

Heap noodles on platter and garnish with sesame seeds and cilantro.

Absolutely the perfect meal on a day too hot to cook! I added some tofu to pack some more protein to make it a main dish. And what a treat for leftovers right out of the fridge. Thank you so much.
