What is bok choy?

Bok choy, also known as pak choi, bok choi, quing cai and Chinese cabbage is a crunchy and leafy vegetable with rounded leaves on wide white stalks. It is a member of the Brassica family, Brassica rapa.

Bok choy can be shredded for use in stir-frys, casseroles, soups or braised dishes. It can also be sliced in half and grilled or charred. Baby bok choy may be cooked whole.

When cooked the leaves wilt rapidly but the salks retain a pleasant crips texture.

It is very popular in Asian cuisine.
